Ingredients

  • whole milk
  • heavy cream
  • sugar
  • PreGel Dextrose
  • PreGel Nonfat Dry Milk
  • PreGel Base Sublime
  • PreGel Strawberry ForteFrutto
  • PreGel Cacaopat Traditional Paste

                  Step by Step method

                  • Strawberry Gelato

                    3000g whole milk
                    300g heavy cream
                    540g sugar
                    100g PreGel Dextrose
                    100g PreGel Nonfat Dry Milk
                    150g PreGel Base Sublime
                    200g PreGel Strawberry ForteFrutto

                    METHOD OF PREPARATION
                    Mix all ingredients together.
                    Blend with immersion blender.
                    Heat the mix to 85°C/185°F
                    Let the mix age and hydrate for ½ hour (optional).
                    Pour in batch freezer and freeze.
                    Place directly in your display case for layering.

                  • Chocolate Gelato

                    3000g whole milk
                    300g heavy cream
                    540g sugar
                    100g PreGel Dextrose
                    100g PreGel Nonfat Dry Milk
                    150g PreGel Base Sublime
                    400g PreGel Cacaopat Traditional Paste
                    METHOD OF PREPARATION
                    Mix all ingredients together.
                    Blend with immersion blender.
                    Heat the mix to 85°C/185°F
                    Let the mix age and hydrate for ½ hour (optional).
                    Pour in batch freezer and freeze.
                    Place directly in your display case for layering.

                    METHOD OF PREPARATION FOR PAN
                    Alternate flat layers of strawberry gelato, chocolate gelato and PreGel Gran Stracciatella Reale Arabeschi.
                    Allow each layer of gelato to set in the blast freezer for 5-10 minutes before adding the next layer.
                    Finish the pan with some chocolate covered strawberries and enjoy!

                    ** The PreGel Gran Stracciatella Reale Arabeschi will set fast so there is no need for placing it in the blast after putting a layer on the gelato.
