Catalan Cream is a traditional dessert originated in Catalonia, in the northeast corner of Spain.
This widely appreciated dessert is made with thick custard filling flavored with lemon peel and cinnamon, and covered with a thin layer of caramelized sugar on top.
Ingredients for a 4 kg tub:
White base 3500 g
Crema Catalana Traditional Paste 300 g
Milk 200 g
Catalan Crunchy Grains (to taste)
Method of preparation
Mix together white base, milk and Crema Catalana Traditional Paste until smooth and well combined.
Process the mixture in the batch freezer, then garnish the gelato pan with Catalan Crunchy Grains.
